The intensity of flavor is also a result of a large amount of fertilizer used in cultivation to give the leaf an infusion of nutrients. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe heritage grade uses traditional techniques in shading (a canopy covered in straw which allows the farmer to adjust the amount of shading day by day depending on the sunlight) as well as handpicking. High grade sencha may be considered higher grade simply due to the skill of the farmer, but also due to how early the tea leaf is harvested (the earlier, the more delicate and sweet the leaf will be as exposure to sunlight \/ longer leaf growth creates a more bitter and stiff leaf).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eSummer harvest, or the second flush generally in June - July, produces a leaf that doesn’t have as strong of a flavor as the spring harvest, and is often cultivated purposely by the farmer for higher volume (larger, lower quality leaf) since the second flush does not fetch a significant price on the market anyway.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eWhile you can shade a tea plant and call the harvested leaf sencha, in general we consider unshaded leaf to be sencha to differentiate from shaded leaves.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003ca href=\"https:\/\/yumenet.live\/collections\/bancha\"\u003e\u003cb\u003eBANCHA\u003c\/b\u003e\u003c\/a\u003e\u003cspan style=\"font-weight: 400;\"\u003e - 番茶 or 晩茶 - A type of tea leaf processed in the same way as the ones above but allowed to grow to a large size for higher volume. This also means that the leaf is too stiff to roll into needles, and end up shaped like willow leaves (in fact, in Western Japan, non-roasted bancha is called “yanagi bancha” = “willow bancha”). This leaf, as the lowest quality, is also often used for making roasted green tea, or hojicha. This will affect the taste of the tea as well, with soft water generally recommended for Japanese teas. In many countries, bottled water products often have the hardness of the water listed in small print on the back label along with the pH balance. Testing various water types is an interesting experiment. \u003c\/p\u003e\n\u003cp\u003eThe \u003cstrong\u003eamount of tea leaf and water\u003c\/strong\u003e you use are inversely proportional and determine the strength of your tea. Use more tea leaf or less water for stronger tea, more water and less leaf for weaker tea.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eSteeping time\u003c\/strong\u003e also affects the strength of the flavor, a longer steeping time resulting in a stronger flavor.\u003c\/p\u003e\nFinally, \u003cstrong\u003ewater temperature\u003c\/strong\u003e affects a Japanese green tea leaf in a very interesting way. In this experiment, both the amount of water decreases and you disturb the tea leaf as well, and these two factors also increase the strength of the tea for a more pronounced result. For a more accurate experiment, you will need to control for this using multiple tea pots.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003ch2\u003eControlling for Temperature\u003c\/h2\u003e\n\u003cp\u003eIn the second experiment, you need a tea pot and again four cups. However, this time, you will need to steep several sets of tea leaves.\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003e\n\u003cstrong\u003eCup 1\u003c\/strong\u003e: Prepare 5 grams of kabusecha tea leaf, steeping with 200 ml of water for 120 seconds. Use 90C\/194F degrees.\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003eCup 2\u003c\/strong\u003e: Prepare with the same recipe, using 70C\/158F degrees.\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003eCup 3\u003c\/strong\u003e: Prepare with the same recipe, using 50C\/122F degrees. Save this leaf, because you will steep it again.\u003c\/li\u003e\n\u003cli\u003eCompare the flavors between these three cups. Cup 3 will have the least astringency and the strongest umami \/ sweet taste. Compare the difference in flavor between Cup 1. Was it the same or different? If you notice a difference, you have a pretty good taste palette.
